What is a tirópita?
A tirópita is a cheese pastry made with féta and other cheeses layered in flaky baked fîllo dough. At home we bake them in a big tray and cut them into triangles or diamonds. There's a similar pastry called spanakópita, which also includes spinach.
The tirópita I found in Athens were large, thick, circular pastries with many layers of fîllo and just a little cheese.
